Core 2 Apples and cut in half then slice thinly.
Place slices in a bowl of water with the juice of half a lemon.
Microwave on high for 3 minutes.
Mix 3 tbsp Apricot preserves with 2 tsp water.
Roll out 1 sheet of puff pastry and cut into strips about 2" x 6".
Place 1 Tbsp of preserve mixture on the pastry
Layer apple slices on the top half of the pastry with each slice overlaying half the previous slice.
Sprinkle with cinnamon
fold bottom half of pastry over the apples. roll into a rose and place into a cupcake tin.
Bake at 375 degrees for 35-45 minutes.
Dust with a little icing sugar
