Chili
Ingredients
2 tablespoons oil
Veggies
1 large onion diced
1 c Celery diced
1 green bell pepper diced
2 cups sliced mushrooms
(alternative to fresh mushrooms is canned whole mushrooms these would be added with the rest of the canned ingredients)
Meat
1 lb ground beef
Spices
2 tsp garlic powder
4 tbsp chili powder
1 tsp cayene pepper
1/2 tsp crushed red pepper flakes
1 tbsp cumin
1 tbsp italian spice blend
Canned ingredients
1 can brown beans
1 can red kidney beans
1 can white kidney beans
1 can tomato sauce
1 can crushed tomatos
Directions
In a large stock pot, heat the oil and start cooking the onions, celery and bell pepper on medium-high heat.
Add sliced mushrooms and continue cooking
Add ground beef and cook until it is all browned.
Add remaining ingredients and bring to a boil then reduce heat and simmer for about 30 minutes.
Taste and adjust seasoning to your own preference
serve with bread or pasta
when serving you can also add cheese or sour cream.
Notes:
- the longer it simmers the more the ingredients blend.
- for less heat you can switch out some of the chili powder with paprika
