Oriental Noodle and Cabbage Salad


2 L shredded Cabbage
2 greens onions, chopped
450 g fresh mushrooms, sliced
250 g bean sprouts
125 ml toasted slivered almonds
50 ml toasted sesame seeds
500 ml chow mein noodles
1 package instant noodles with seasoning (crumble the noodles)
125 ml oil
45 ml vinegar 5 ml sugar
5 ml salt
2 ml black pepper
15 ml soy sauce


  • In a large salad bowl, combine cabbage, green onions, mushrooms, bean sprouts and almonds.
  • In a small bowl combine sesame seeds, chow mein noodles and broken instant noodles.
  • Dressing: combine seasoning mix, oil, vinegar, sugar, salt, pepper and soy sauce.
  • Just before serving add noodles and dressing to cabbage mixture and toss.
  • Yield: 25 servings.

Note: I usually only make this for large gatherings because of the number of portions created.
