
This isn't a traditional carbonera, it is a quick and easy version.
400 g spaghettiBring a large pot of water to a boil add the spaghetti according to package directions.
While the pasta is boiling, prepare the carbonera sauce. Place eggs in a bowl. Whisk to combine. Then stir in the parmesan, pepper, bacon and parsley.
When the spaghetti is done, reserve 1/2 cup of pasta water, then drain the spaghetti.
Put the pasta back into the pot with the egg mixture and stir vigorously for a minute or more. Add some of the residual pasta cooking water to thin out the sauce and then continue stirring until you get the desired consistency.
Plate and garnish with a little more parsley and cheese
